1. What does the tailor-made training course involve ?

For tailor-made training, I adapt to your needs based on a catalogue of topics that are close to my heart.
You can choose from the following options:

  • Cooking beans and legumes
  • Cooking cereals
  • Discovering tofu and other soy products
  • Gourmet plant-based sauces
  • Creative ways to cook vegetables
  • Plant-based pastries
  • Anti-waste cooking using fermentation

2. How does the training take place?

A training course lasts one or more days, depending on your needs.
Before the training, I will send you a list of items to order from your suppliers.

In general, we do a short theory session before each module and then we go to the kitchen to prepare:

  • the recipes I have provided
  • to test techniques or ingredients that the trainees are not used to working with
  • create dishes using the ingredients and techniques covered in the theory and practical sessions

Depending on the package you prefer, I usually like to give my trainees creative freedom so that they can make the techniques, ingredients and recipes their own. This way, they learn more quickly and can more easily integrate them into their daily work.

3. How long does a training course last?
  • The duration varies between 1 and 3 days, depending on your specific needs.
4. Who can benefit from these courses?
  • Head chefs, restaurant owners, cookery teachers in culinary schools and apprenticeship centres, and all staff involved in preparing and serving food.
5. Can I adapt the recipes to my current kitchen?
  • Absolutely! The recipes are designed to be easily integrated into your existing culinary style.
